The process to use an external Solr instance is outdated

On the xwiki/docker repository's documentation, the process to use a Remote Solr doesn't work anymore:

The `solr-initscript.sh` script mounted inside the solr container contains command that doesn't work.

To solve this issue, there is the need to update the documentation and the solr image configuration to make it work again
