Decouple the sheet API implementation from the old XWiki model so that it can be tested more easily

Introduce a ModelBridge internal component that provides the methods missing from DocumentAccessBridge and DocumentModelBridge. This allows as to test for instance the SheetDocumentDisplayer and the DefaultSheetManager without mocking the old XWiki model (which is very painful).
