Allow the default OIDC client to be switched at runtime

Currently, when multiple OIDC clients exist, the authenticator uses the client with the name set to `default`.

This property can be updated in the xwiki properties file. It would be nice to have this value, and other app-wide configurations, updateable at runtime through an xwiki page.
