Add $escapetool.json for escaping JSON

While JavaScript and JSON use almost the same escape syntax, one critical difference is that ' doesn't need to be escaped, and it's actually a syntax error to escape it. This causes the livetable to fail to display correctly in certain browsers if there's a document containing an apostrophe in its name, or is created/authored by a user with an apostrophe in his name.
