Improve ease of use of the docker compose files

Right now the following problems exist:

• The compose files rebuild the XWiki docker image which should not be required
• No default config values are provided and users forget to add them or edit the compose file
• Remove the need for a xwiki.cnf MySQL config file, by putting the config int he compose file
• Fix location if init.sql which doesn't match the documentation
