Set git tags for stable versions in docker-xwiki repository

Currently, there are no tags present in: https://github.com/xwiki-contrib/docker-xwiki
It would be nice if you'd set them for new stable versions.

If you use the repo for the compose files or creating custom builds of the docker image, you should be able to keep track of the changes.

Currently there is only a master branch with no tags.
