Cannot run individually wiki-test-docker tests

It is currently not possible to run individually the tests scenario from the module xwiki-platform-wiki-test-docker. To reproduce it, just try to run mvn clean install -Dit.test=WikiTemplateIT in that module.

The reason of that problem, is that the tests needs a UITest configuration defined only in AllIT so when using -Dit.test AllIT is skipped and so is the setup.
An easy fix is to copy/pasted the AllIT setup in every tests, but that's definitely error-prone in case of test evolution. Would be probably cleaner to have a proper way to select a test to execute from AllIT by using a dedicated parameter such as -Dpattern in non-docker integration tests.
