Can't create a new instance connected to MySQL after having issues with the old instance

Today I got some really weird errors in the xwiki console, that I never encountered before https://up1.xwikisas.com/#IYm92QN7Saw7gJj25EJS-Q
I wanted to create a fresh new instance but it appears I can't anymore.

Steps to reproduce:

1. Unziped a fresh XWiki 12.7.1 with Standard flavored
2. Added the required connector and made the changed to hibernate to connect with with MySQL 8.0
3. Created the xwiki database in the MySQL Workbench
4. Removed the data folder
5. Started the wiki with IE 11
6. Started the DW
7. Created the Admin user
8. Clicked on Next to access the Flavor

Expected results: The Flavor selection appears.

Actual results: After creating the admin user, Step 6 appears
I don't get the Flavor selection anymore, and this never happened before.

I've made 2-3 instances exactly like this with 12.7.1 and didn't have any issue. The issues encountered started today.
