Use "text" instead of "string" in the hibernate mapping, where appropriate

Technically, "string" should be used for small text values (at most 255 characters), because it is mapped to the VARCHAR datatype, which is limited in most databases to at most 255 characters. This is one of the main reasons why we have separate mapping files for oracle and derby.
