Jetty-based distribution packages should use an on-disk temp directory

Currently, Jetty-based packages use a "working" directory under /tmp, which is often mounted as tmpfs.

In demo packages, creating a work directory next to start_xwiki.sh seems to suffice to have the work directory on disk. (which makes it a workaround for this issue until it's fixed)
