Issue with latin characters typed in the registration form

When using the registration form from the administration panel ("Register new user"), latin characters with accents typed in the form are then transformed to unreadable ones, even though XWiki is properly configured for ISO-8859-1 encoding (in xwiki.cfg and on the database side).
