Inconsistency between various Hibernate MySQL setup

We have at least 3 different "documentations" related to MySQL encoding setup:

1. XE generated hibernate setup for MySQL: https://github.com/xwiki/xwiki-enterprise/blob/master/pom.xml#L342

3. Encoding documentation: http://platform.xwiki.org/xwiki/bin/view/AdminGuide/Encoding#HHibernateconfiguration

We need to decide which one is the right one.
