It's impossible to import the XWiki.Notifications.Code.Macro.NotificationsMacro page in MySQL "latin1" encoding

Not having a utf8mb4 mysql database and trying to install xwiki default skin will result in a few macro's (like the Notifications macro) not working. Steps to reproduce:

• start docker-compose.yml
• install default skin on setup
• get all the errors!
• After setup the notifications tab in a profile states it can't find the macro

Alternative:

• go through the setup without installing a skin
• try installing the notifications macro via the extensions
• get error on installing

I've added 2 txt documents with some logs in them hoping they're enough to pinpoint the utf8mb4 pages in the default skin.
